One-Pot Campfire Chili

Ingredients:

  • 1 pound ground beef or ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (14 oz) corn, drained
  • 2 cups beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions:

  1. Heat a large cast-iron pot or Dutch oven over your campfire or RV stove.
  2. Add the ground beef or turkey and cook until browned, breaking it into crumbles as it cooks.
  3. Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Cook until the vegetables are softened.
  4. Add the diced tomatoes (with their juice), kidney beans, black beans, and corn to the pot.
  5. Pour in the beef or vegetable broth and stir to combine all the ingredients.
  6. Season the chili with chili powder, cumin, paprika, oregano, salt, and pepper. Adjust the seasonings to taste.
  7. Let the chili simmer over the campfire or RV stove for about 20-30 minutes, stirring occasionally to prevent sticking.
